Brien Maple Sweets
Maple Syrup World is operated by Brien Maple Sweets, a leader in the maple syrup industry. The pure maple syrup offered on Maple Syrup World's website is the same maple syrup we use when making, amongst other products, our famous maple butter, and soft maple candies. Our maple syrup is carefully selected and exclusively sourced from Canadian maple syrup farms, which makes us very proud!
The Brien maple syrup farm was established by Sylvio Brien, in 1956, in Sainte-Anne-de-la-Rochelle, a small village in the heart of the Canadian countryside. Brien Maple Sweets started as a small family sugar shack and produced artisanal maple products focused on quality. Nearly two-thirds of a century later, the humble "sugar shack" has modernized to become one of the largest and most diversified maple syrup factories in North America.
At the head of this family business that now counts around 30 employees, Caroline Bordeleau and Philippe Charest-Beaudry continue to cherish the values of the Brien family and respect the terroir. Thus, they are keen to offer our customers natural products of exceptional quality , made with the greatest respect for tradition .

No preservatives or artificial flavours are added to Brien products, which can be certified organic on-demand. Maple products
Brien Maple Sweets specializes in added-value maple products such as maple butter, maple candies, maple sugar, as well as (of course!) pure maple syrup. With the right techniques, which we mastered over the years, maple syrup metamorphoses into a variety of other maple products, often without having to add anything to it.
Maple butter: Maple butter, also known as maple cream or maple spread, gets its name from its amazing butter-like texture and contains only one ingredient: 100% pure and natural churned maple syrup.
If we had to recommend you a product from our line, maple butter would be the one! Why? Our maple butter is not only delicious, but it also stands out for two reasons. First, it remains homogeneous, meaning that the maple syrup does not separate at the top of the jar, and two, our maple butter is shelf-stable at ambient temperature for up to 2 years, with no need to refrigerate it before opening.

Maple candies: You will find both hard and soft maple candies on our website. Our specialty, however, remains soft maple candies, known as maple fondants. Maple fondants are also a 1-ingredient product, made exclusively from 100% pure maple syrup.
Their soft melt-in-your-mouth texture is what steals the show. Maple fondants are made from a combination of maple butter and maple taffy; can you imagine the texture? If you never had maple fondants before, you are truly missing out. They are the perfect maple treat!
Maple sugar: When boiled and cooled to specific temperatures, maple syrup can be filtered and turned into little particles, which is what maple sugar is. Exclusively made from 100% pure maple syrup, maple sugar is available in a range of granularities on the market, and you can use it, in equal quantity, to replace brown sugar or regular sugar in your recipes, it works wonders!

Maple production
How to make maple syrup? Maple syrup is made by boiling maple sap, also known as maple water, to exactly 66° Brix. The degrees Brix determine the sugar content in a liquid. Maple sap runs through the maple trees and it’s that liquid that is boiled to create maple syrup (in the maple syrup process).
Good to know – Even though there’s a little bit more than 150 species of maple trees in the world, only the sugar and red varieties are harvested for maple syrup because they are the only one to produce maple sap.
Where does maple syrup come from? According to Maple from Canada, 71% of the world’s pure maple syrup comes from Canada, with over 8,600 maple businesses across the country. Within those 8,600 maple businesses, more than 7,400 are based in Quebec alone. Because of its cold winters and milder springtime conditions, Quebec is the ideal place to have a maple farm.
What about the different grades, colours and flavours? In Canada, all maple syrup found in stores is “Grade A” maple syrup, which certifies that the syrup is obtained by no other method than concentrating maple sap (maple water), that it’s free of fermentation, uniform in colour, free of sediment, that there’s no cloudiness in it, that its maple flavour is characteristic of its colour and that there’s no objectionable odour or taste in it. The maple syrup you will find on our website is Grade A maple syrup.
In terms of colours and flavours, there are four (4) classes of maple syrup: golden and delicate taste, amber and rich taste (the most popular grade in-store), dark and robust taste, and very dark and strong taste. What explains those nuances? The colour and flavour of maple syrup change over the maple syrup season; in fact, as the sugaring season advances, the syrup gets darker in colour and the maple flavour intensifies.
